Raw Golden Burgers & PatéGolden Burgers & Paté

Okay… so this is so good! You can make it into burgers and dehydrate them or leave it fresh and use it to fill wraps or as a dips for crackers and veggies. It really is versatile and delicious.

2 cups packed nut pulp (not dried)
1/3 cup of oil
3 tablespoons nutritional yeast
2 teaspoons of celtic/himalyan sea salt
2 cloves garlic
1/3 cup water
½ up sesame seeds

Using a food processor, add all ingredients except sesame seeds and mix thoroughly, scraping down the sides as needed. When it is all mixed, add the sesame seeds and mix well, leaving the sesame seeds intact but throughout the mixture.

Did you know…?

Tiny little sesame seeds contain 10 times the calcium of cow’s milk for the same size portion! Bring on the sesame milk!

If you choose to make burger, use about 2 tablespoons of the mixture, roll into a ball and press somewhat flat. Dehydrate on 106 degrees for about 3 hours or until warmed through. Serve with a slice of tomato, lettuce and pickle for a scrumptious little burger.

If you are using as a pate, you can fill a lettuce leaf with the pate, add some avocado slices, cucumber slices, red peppers, sprouts…whatever you like. Roll it up and serve. It is a great dip too!

Chocolate Chai MylkshakeChocolate Chai Mylkshake

This is the best, most amazing milkshake ever! You have got to try it… you won’t be sorry! It is a huge hit at potlucks!

2 cups almonds, soaked for at least 6 hours
6 cups pure, fresh water
½ cup packed dates
2 fresh or frozen bananas
1 tablespoon cocoa or carob
1½ teaspoons cinnamon
½ teaspoon cardamom
¼ teaspoon nutmeg
2 cloves
½ – 1 inch of fresh ginger or ¼ teaspoon dry
1 teaspoon vanilla (alcohol free) or half a vanilla bean scraped
Juice of 1 orange

Did you know…?

Fresh ginger has long been used to fight depression. It is also the best natural remedy for motion sickness and a great breath freshener too!

Put almonds in a colander and pour some fresh water over them to remove the soak water residue. Put water and almonds into a blender and blend on high speed until all that is remaining from the almonds is a pulp, (time varies depending on blender). Pour the almond mylk through a nutmylk bag and strain, squeeze, twist… whatever it takes to get most of the mylk out of the pulp. Put the pulp in a container and use within 1 week.

Pour the almond mylk back into the blender along with all the other ingredients. Blend very well.

Pour into a glass as is or serve over ice.

Raw Carrot SpaghettiniCarrot Spaghettini

Really, really good just on its own as a side dish, or you can top it off with our ‘Basil Pesto’ or ‘Raw Spaghetti Sauce’! Different and simply delicious!

Carrots… a little goes a long way! (thick carrots work better than thin ones)

Flax seed oil or whatever is your favourite oil.

Salt

If you have a vegetable spiralizer, go ahead and spiralizer the carrots. If you don’t, you can use a vegetable peeler and make long strands of ‘spaghettini’. If you don’t have any of those… you can use a grater and grate your carrots.

TIP

To keep carrots fresher, longer, store them in the fridge without the carrot tops attached. Cut or snap them off and they will not get wilted and soft. Use the tops in your green smoothie!

Place the carrots in a bowl and sprinkle with a very small amount of salt and drizzle with flax oil. Toss gently until it is well mixed. Cover and let sit at least a couple of hours or over night.

You can serve it as is or warm it up for an hour in a dehydrator on 106 degrees.

Raw Lemon Lime Cheesecake MinisLemon Lime Cheesecake Minis

Perfect dessert… that you could even have for breakfast! So delicious and simple to make, you might want to make extra!

3 cups of cashews, soaked for 4-6 hours
3 limes
2 lemons
¾ cup of honey, maple syrup or agave syrup
¾ cup of coconut oil
¾ cup of water
A dash of stevia to taste.

Zest lemons and limes and set aside. Add all the other ingredients in a blender or a food processor and mix until very smooth, scraping down the sides as necessary.

TIP

The trick with stevia is not using too much. Add only enough to make it sweet without getting that after taste. I like to use it because it is healthier than all other sweeteners and virtually calorie free.

Pour into small serving dishes, decorate with lemon and lime zest and refrigerate at least 4 hours. Enjoy this one!
